1 Tb OLIVE OIL
2 large SWEET POTATOES
½ tsp CINNAMON
Juice of ½ LIME
1. Heat the oil in 9×13” pan in 375° oven until hot (about 7 minutes).
2. Cut sweet potato (unpeeled) into ½ inch cubes.
3. Remove pan from oven, add potatoes and sprinkle on cinnamon. Mix well.
4. Bake 50-60 minutes, stirring every 20 minutes. Remove from oven when potatoes are soft inside but crusty outside. Drizzle lime juice over the top and serve.
