1-2 Tb olive oil
1 medium ONION, chopped
2 cloves GARLIC, minced
1 BELL PEPPER, chopped (any color)
1 medium ZUCCHINI, chopped or grated
2 POTATOES, grated or chopped into small pieces
1 cup chopped CHICKEN (raw or cooked)
2 cups SPINACH, chopped
8 cups water
2 packets chicken BOUILLON
1 Tb PARSLEY (dried) or 2 Tb fresh, chopped
½ tsp each SAGE, ROSEMARY, THYME (dried) or 1 tsp each fresh
½ – 1 cup CHEDDAR CHEESE, grated
SALT to taste
1. Heat oil in pan. Saute onion and garlic for 1 minute.
2. Add pepper, zucchini, potatoes, chicken, and spinach. Saute for 2-3 minutes.
3. Add water and bring to a boil. Boil 10 minutes or until vegetables are cooked.
4. Add bouillon, herbs, and salt. Taste.
5. Add cheese and serve.
