Kamut Broccoli Sunshine Salad

Kamut is a whole grain similar to wheat and twice the size of rice. The flavor is mild, which makes it disappear into broccoli salad. It turns this Sunshine Salad into a complete Food Pyramid meal!

Ingredients:

1/2 cup kamut, cooked (see package: it’s cooked like rice, but longer)

2 cups broccoli, chopped

2 Tb onion, chopped small

1/4 cup raisins

2 strips bacon, cooked and crumbled

3 Tb feta cheese, crumbled

1/4 cup mayonnaise

1/2 Tb sugar

1 Tb apple cider vinegar

 

1. Mix kamut, broccoli, onion, raisins, bacon, and cheese in a bowl.

2. Mix mayo, sugar and vinegar well in a small bowl. Stir into veggie mixture.
