Chol-egg-sterol: Do eggs raise cholesterol?

eggsI’ve often wondered if eggs really do contribute to high cholesterol. Some research says yes, some says no, some says maybe. I’m no eggspert, but I did an unofficial eggsperiment this year that had some clear results. Let me eggsplain.

I’ve had high cholesterol for years. When I started losing weight, I managed to lower my cholesterol by 40 points over two years using diet and eggsercise. During those years, I ate two eggs per month. One of my sons is allergic to eggs, so I only bought them once a month and the non-allergic family members feasted for a day and washed our hands and dishes thoroughly afterwards. I even learned to bake without eggs.

My allergic son is outgrowing his egg allergy, so one year ago we got five chicks and last November those chicks turned hens began laying five eggs per day. For the past six months, I’ve been eating 2-4 eggs per week.

scrambled-eggsAs my annual medical checkup and blood work screening loomed, I wondered whether my lowered cholesterol had remained low. I was a little bit eggcited to see my results; the ONLY thing in my lifestyle that had changed in the one year separating the blood work was my egg consumption.

My eggspectations were confirmed: my LDL is back up 40 points. Oops.

I’m not devastated because I know how to fix it. What’s an egg-loving, hen-owning gal to do? Eat the whites, limit the yolks. Not a bad solution.

This poor blog post: with all of these egg puns, its cholesterol is going to be through the roof! What’s that you say? The yolks weren’t funny? Fair enough, then they don’t count and this blog post’s doctor will be content.

Meatless Meatloaf or Cheesy-Veggie-Quinoa-Loaf (Recipe)

This recipe was given to me by a friend after she brought me a slice to try and I begged her for more. It has all of your major food groups in one pan.

Ingredients:

3 cups grated zucchini

2 cups grated carrot

8 oz cheddar cheese, grated

2 onions, chopped

1 1/2 cups uncooked quinoa or couscous (or some other small grain)

3/4 cup oil

4 eggs

1 tsp salt

pepper to taste

1 packet chicken bouillon OR 1-2 Tbsp fresh (or 1-2 tsp dry) herb(s) or your choice (When in doubt, go to Scarborough Fair: parsley, sage, rosemary, and thyme.)

 

Directions:

Mix all ingredients and spread in ungreased loaf pan. Bake in 350 degree oven for 1 hour.

 

What Nutritionists Eat When They Want to Slim Down

2014 Aug angry birds 016There was in interesting article on Fox News.com last week called “What Nutritionists Eat When They Want to Slim Down”. There are three important takeaways I’d like to pull from this article and the first one comes from the title.

Even experts get off track. The title itself implies that nutritionists aren’t 100% slim 100% of the time. Gasp! You mean that even people who spend years studying food and the human body and KNOW what they should and should not eat – even they get off track sometimes? They’re…they’re human? Gasp again! So if I get off track every once in a while, I’m human too? And I should stop beating myself up and start fresh today doing what I need to do to be on track again? How many rhetorical questions can a blogger type in a row before everyone groans? Two? Really? Okay, I’ll stop. Sorry about that.

P1050153More vegetables and protein. Almost every nutritionist said that they increase their intake of plants and proteins and limit carbs and sugar. More good stuff, less bad stuff. One lady said she puts a little cheese on her steamed vegetables.  That’s what I’m talking about! They eat real food – good for you real food – but limit the portion sizes.

They agree with me! It’s like the nutritionists have been reading my blog. The two tips they gave that didn’t boil down to “more veggies and protein” were to eat soup (because it’s full of vegetables, water, and fills you up with fewer calories) and to get more sleep.  Ta da! Sex, Soup, and Two Fisted Eating! I feel like an expert now. “10 out of 10 random nutritionists from some random article agree that Katie knows what she’s talking about.”

Weight Loss and Faith

Weight loss can be frustrating. For example, six weeks ago my boys joined the swim team and I started exercising during their practices, five days a week. That was in addition to my normal exercising. I was also watching what I ate. Despite the extra effort for six weeks, the scale hasn’t budged and my clothes fit the same. I want to throw up my hands, yell “I quit!”, and play on my tablet during practice like the other moms instead of swimming laps or walking on the treadmill.

6But I can’t do that. First of all, my boys will be embarrassed if I yell like a crazy woman in front of their friends, and second, I’ve got to believe all of this work is having a positive effect somewhere in my body. Somewhere, deep down, I have cells that look like they just won Biggest Loser. But I have to keep trying until those effects grow beyond the microscopic and become visible to my naked eye.

Weight loss takes faith. When I started losing weight three years ago, I knew it would take work, and I knew it would take resilience, but I never expected to need faith.

I have to have faith that the vegetables I eat, the sleep I snooze, and the exercise I do is making a difference until time has passed and I see evidence of that difference: I feel stronger, my cholesterol drops, I look trimmer, and so forth. I would love faithless weight loss. Eat a carrot and BOOM: one pound lighter. Lift a weight and BOOM: a bicep appears out of nowhere. SIGH.

P1010166But God designed our bodies to adapt to our behavior over time. (And thank God that He did! If a goldfish overate like I did, it wouldn’t store fat, it’d just die.) As it is, our bodies expand to accommodate extra food and shrink back when food is decreased. When we eat sugar and sit on our rears, our bodies crave sugar and tire easily, but when we eat plants and move our limbs, our bodies miss those things if we stop. We adapt and actually begin to crave what’s good for us.

Just like people who read the Bible every day don’t expect an angel choir mountain top super spiritual experience every time they read a verse, but notice changes over time in their relationship with God and others because of their Scripture reading, so too physical changes take time and perseverance to happen. Instead of faith in God, it’s faith in how God created our bodies to function.

2013 August 106Study after study has shown that the benefits of exercise and eating well start at the cellular level. There are many trillions of cells in the human body, so it takes a while for us to notice when a few million of them change.

Don’t give up. (Preaching to myself here.) Have faith that what you do for your health today will benefit you today and next week and next month, even if you don’t see results now.

P.S. I wrote the rough draft of this post last week and this week I stepped onto the scale and there was visible progress! Not a whole heapin’ lot after 6 weeks, but I’ll take it! Hooray! “Never give up; never surrender!” (Galaxy Quest quote – great movie.)

Recipe for Chicken Ranch Tacos

chicken-ranch-tacos-1-23-10_edited-11 box (4.7 oz) Old El Paso® Stand ‘N Stuff® taco shells (10 shells)
3 cups cut-up deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 package (1 oz) Old El Paso® taco seasoning mix (or 3 tablespoons homemade)
1/2 cup ranch dressing (2 T of homemade was sufficient for me)
1 1/2 cups shredded lettuce
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar cheese (4 oz)
1/4 cup sliced green onions (4 medium), if desired
Old El Paso® Thick ‘n Chunky salsa, if desired
Additional ranch dressing, if desired

1. Heat oven to 325°F. Heat taco shells in oven as directed on box.
2. Meanwhile, in medium microwavable bowl, place chicken. Sprinkle with taco seasoning mix; toss gently to coat. Microwave uncovered on High 2 to 3 minutes or until hot. Stir in 1/2 cup dressing.
3. Spoon warm chicken mixture into heated taco shells. Top with lettuce, tomato, cheese and onions. Drizzle with salsa and additional dressing.

Tips:
Instead of rotisserie chicken, use any diced cooked chicken.
Offer additional taco toppings such as olives and sour cream.

Asparagus Poem

2014 April 002I was thinking of honoring asparagus in verse when I discovered that Judith Natelli McLaughlin already had! This lovely poem is hers and she has more garden-bounty-honoring poetry on her blog. Click on her name for the link.

This is asparagus season in the northeast USA! I’m spoiling myself by eating asparagus raw straight out of my garden. It’s almost sweet, believe it or not.

Is TRX For Me?

TRX groupI tried a TRX demo class this week and I’m tempted to sign up for the real thing. Let’s take a look at the pros and cons.

I arrived two minutes early and stood in front of a strap attached to the wall, surrounded by people in spandex. I, of course, was wearing a baggy old t-shirt because I’m not going to spend $20 on a shirt I’m only going to sweat in. (I’m looking for sales, though. I’d spend $4.) I passed my first TRX challenge, which was to NOT run out the door. Whenever I enter a group exercise class, I have this illogical fear that I’ll be found out: someone will walk up to me and say “Hey, you’re not athletic! What are you doing here?” That didn’t happen. (Whew! Fooled ‘em again!)

trx plankPRO #1: The instructors were welcoming and helpful.

It took us 15 minutes to do our “5 minute” warm up because we had to learn how to use the straps. Lengthen them, shorten them, hands in the handles, feet in the handles, face the wall, face the center of the room, put your left leg in and you shake it all about.

trx jumpPRO #2 This could be the closest I ever come to being a trapeze artist.

It was a good workout. We worked our arms and legs, sucked in our bellies, and tightened our buttocks. When asked how I felt at the end of class, I answered honestly: “Shaky”. I congratulated a fellow classmate when we managed to walk up a flight of stairs after class without collapsing.

trx liftPRO #3 This kind of intense workout will never happen if I don’t have an instructor “making” me do it. I could end up with visible muscles.

When the instructor described the goal for the class (about 3x the work we did in this demo class), I was scared. I’d have to learn how to plank. I’d have to do pushups and sit ups. I would sweat. I would be sore (and as a stay at home mom who bends, lifts, and moves all day long, that makes for a very long day).

CON #1 No chance to wimp out and be lazy.

This is exactly the type of exercise I don’t go for. But for some reason, I think I’m willing to try. And it just might, maybe, sorta kinda have something to do with bathing suit season being only six weeks away. Trapeze artist, here I come!
